In it, he describes a feast that included various meat dishes including qorma.

How to make Chicken Karahi

It is a simple dish made with chicken, tomatoes, and spices. The key to making a great Chicken Karahi is to use fresh ingredients and to cook the chicken until it is tender.

To make our Chicken Karahi, you will need:

  • 1/2 cup oil or ghee
  • 550g chicken, bone-in and cut into curry pieces
  • 600g tomatoes, finely chopped
  • 1 bulb garlic, minced
  • 2 tbsp ginger, minced
  • 1-2 tsp salt, or to taste
  • 2 tsp paprika/Kashmiri red chili
  • 1.5 tsp crushed black pepper
  • 1 tsp chili flakes
  • 0.5 tsp cumin powder
  • 0.5 tsp coriander powder
  • 1tsp kalonji (black seed, optional)
  • 2 green chillis, slit in half lengthwise
  • 0.5 bunch of coriander, chopped
  • 1/4 cup ginger cut into matchstick pieces

Directions: In a large pot or karahi, heat the oil over medium heat. Add the onions and fry until golden brown. Add the garlic and ginger and fry for an additional minute. Add the chicken pieces and fry until they are browned on all sides. Add the tomatoes, cumin powder, coriander powder, turmeric powder, red chili powder (if using), and salt to taste. Stir well and add the water. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes or until the chicken is cooked through. Serves 4
